Beet, Cucumber, and Lemon Juice

Looking for a refreshing way to hydrate this summer? Try incorporating some lemon juice into your diet! Not only is it great for quenching thirst, but lemons are also packed with vitamins and antioxidants. Here are three recipes that will help you get the most out of your lemon juice:

1. Beet, Cucumber, and Lemon Juice Recipe This recipe features two kinds of vegetables in a sweet and tangy potion that will refresh you on a hot day. In addition to being delicious, this juice is also good for promoting healthy digestion. Ingredients:

2 bunches of fresh beets (about 8-10), tops trimmed off 1 cucumber, peeled and chopped into small dice ( about ½ inch) 1 big lemon, juiced

Directions: First, find a large container that can accommodate all of the ingredients. I prefer to use an organic produce bag so there’s no need for any extra packaging. Second, wash and slice the beets portobello mushroom caps into thin wedges as well. Set aside in a separate bowl or plate. Peel and chop the cucumber into small dice (about ½ inch). Add it to the container along with the lemon juice. Third, add enough cold water to cover everything by at least 2 inches. Let the mixture sit in a dark place like the fridge overnight so that all of the flavors can meld together —or for up to 12 hours if you’re in a hurry.

Enjoy this refreshing beet, cucumber, and lemon juice on hot days or as a healthy addition to any meal!
